Dark Chocolate Covered Cheesecake Stuffed Strawberries

With me focusing on my weight, I have been following a few ladies on facebook that have went from big to small. I figure I can get a few pointers, I never thought I would get an awesome recipe. I have a major sweet tooth, normally around that time. Often when I go to the store by myself, I will sneak candy and other junk.

So when I seen the Cheesecake Stuffed Strawberries recipe, I new I was going to turn it into something different, that would give me my chocolate sensation.

1 lb large strawberries
4 ounces package low-fat cream cheese, softened
1 Tablespoon of honey
1 teaspoon vanilla extract
1 cup dark chocolate chips melted

First, mix cream cheese, honey, and vanilla. Take a plastic baggy and put a small slit in the tip. Then put your cream cheese mixture into the baggy.

After that is done you want to prepare your strawberries. Wash off your strawberries in cold water, then cut the tops off, and with a small tip knife clean the inside of the strawberry. I just ran along the small circle in each strawberry. Then pipe the cream cheese mixture into the strawberries.

Melt the dark chocolate in the microwave for about a minute, then dip the top of the strawberries into the chocolate, this will seal up the cream cheese mixture.

The amount of cream cheese mixture in each one is up to you, I did a small amount, these way I was reducing the amount of calories in each one.

Please keep in mind, I am no pastry chef, and the chocolate covered cheesecake stuffed strawberries don’t look to 5 star, but they are amazing!
